Frozen Cheesecake




We inherited a whole bunch of Fowler's Vacola canning jars when we bought our house. We've got a few different sizes and I've loved using them for vases, candles, hot and cold drinks, yoghurt and, last night, individual frozen cheesecakes. I was told that they were seriously good, so here's the recipe, atrociously adapted from here.

Mango and Lime Frozen Cheesecake
1. Whizz up as many biscuits as you think you'll need of whatever kind you have in the pantry or leftover in your child's snack container (I used Scotch finger and arrowroot). Add a bit of water til it kind of sticks together then push into the base of whatever container/s you're using.


2. Beat 2 x 250g room temperature cream cheese til smooth. Mix in 3/4 cup caster sugar and the zest of one lime. Add 300-400 ml of thickened cream and beat til smooth. Pour ontop of biscuit base.


3. Whizz up the mangoes from a 425g can of mangoes. Pour ontop of cream cheese mixture then swirl in with a knife.


4. Freeze 4 hours or overnight. Thaw for 15-30 mins then pour passion fruit pulp over to serve.

A few people went back for thirds last night. I believe it may be a winner!

Rejection with a side order of Encouragement

It's late and I am weary, but I have much to say. My much to say will be cut short as I am not able to keep my eyes open for much longer!
Yesterday Connor tried out for a State Cricket team. He made it through to the second round and has just come back from that. He didn't make the cut.
He was rejected and he had to deal with it. Rejection for Connor is tough as he has had very little...however he seems to be dealing with it fabulously. With his rejection has come resolve...resolve to train more, resolve to be better, resolve to not let the rejection be a brick wall too high to climb over. I am pretty proud of that.
I am also proud of the sweet, kind words of the girl that had to be on the side line yet again who said, "You did so good Connor. I would have picked you on my team and we would have totally won!"
Connor has a sign in his room that says 'Being a BIG brother is better than being a superhero.' To Kenzi her big brother is her super hero.
Some lessons in life are tough, but I am pretty grateful that this has happened. WE get to input and encourage, build up and support so that when rejection and failure comes he knows he has support and strategies to deal.
And so I continue to be a very proud Mummy of two pretty great kids and I am grateful every day.

Where in the World.....

You may have noticed our lack of posts here at the Sisters 4. We have been busy. Not crazy busy, but good busy...you know the op shopping, bike riding, sewing, cuddling, beaching kind of busy. Here is a small catch-up of what has been happening in this neck of the woods.
 Fabulous fishing where fish actually take the bait.
 Attempts to visit the farm thwarted by flooded roads.
 Attempts to drive into the Aldi carpark thwarted by carparks being swimming pools!
 Conquering armies off ready to rule the world.
 Same time of day on opposites sides of our house.

 Most dorky school photo ever...what happens when others are put in charge of 1st day photo's cause you are too busy having a cry in the bathroom about them going off to school...I know they are not in Kindergarten, but I just love having them at home!

 The feet of my fabulous husband who endured downpours while trying to watch an outdoor movie in the park...this is what we all pretty much saw!

The Ones that are Near and Far

We love family. Love as in 'can't get enough of them' kind of love.

We don't often get to see family but that's one good thing that Langlan's wonky leg has brought us, more family.

More days in the UK than first planned, more days in Newcastle.

Despite said wonky leg, it's been wonderful...











































Whilst shopping in Sainsbury's a few days after Langers came out of hospital I found a calendar with two statements that perfectly sums up all of our family:

*In time of test family is best.*

*Families are like fudge...mostly sweet with a few nuts.*

And we miss you NZers!
